Good Food From The Balkans
Cooking does not vary much in the countries of the Balkan Peninsula, and you will find the same dish, with the same name, and only perhaps a slight difference in the pronunciation, served in Greece, Turkey, Bulgaria, Rumania and Yugoslavia. The Byzantine influence predominates in this book of exciting and unusual dishes, and it is easy to make experiments with all the recipes given; to use butter, margarine or cooking fat instead of oil, to leave out some of the garlic and pungent herbs and spices, and yet serve a dish which is just a little different.
