Choice Cookery "La Bonne Cuisine" was written by Margaret Black. "Born Margaret MacKirdy in 1830, the author married John Black, a shawl manufacturer, by the early 1870s. It was after her husband's death in 1874 that Margaret Black is believed to have begun her cookery career by taking a diploma at the National Training School in London, possibly encouraged by a family friend, William Collins, of the publishing company which was to issue her several cookery books and her "Practical laundry work' of 1896.
In 1878 she founded the West End School of Cookery, remaining its Principal until her death in 1903.
