Francatelli’s Cook’s Guide was written by Charles Elmé Francatelli who was an Italian-born chef who worked in England during the 19th century. He is best known for his cookbook, “The Modern Cook,” which was first published in 1846 and was one of the first cookbooks to be written in English by a professionally trained chef and was highly regarded at the time for its combination of classic French cooking techniques with more modern and accessible ingredients and methods.

Francatelli also published a number of other books, including “The Cook’s Guide and Housekeeper’s & Butler’s Assistant” in 1847 and “A Plain Cookery Book for the Working Classes” in 1852.Francatelli was a chef to Queen Victoria and Prince Albert, and his cookbook was highly regarded at the time for its combination of classic French cooking techniques with more modern and accessible ingredients and methods.
